Sunday Baking: Cream Cheese Cookies

Before I had kids, I loved to bake.  It was something I did most weekends.  I wasn’t the best at it but I would try out different recipes and always had fun making it!  Once life started to get busier I gradually stopped doing, so gradually I didn’t even notice for a while.  Now that the boys are a little older I wanted to start baking again. I wanted it to be an activity I could do with them! As looked into it baking has so many benefits for kids,  it helps them in math, following directions, reading, and the list goes on! My goal is to bake with them once a week. It doesn’t have to be anything fancy, just to bake and spend time with them and we’ll have a yummy dessert to enjoy that night!  Who can resist that?!

I received Food 52 Baking cookbook a few years ago as a gift. It one of the cookbooks that despite doing tons of purges I did not give up because the recipes were simple. These were recipes without ten million weird ingredients that I’d have to go to dozens of stores and they didn’t take a lot of time. Even with the gorgeous pictures, I could still see myself making.

As I was going through the book I saw these Cream Cheese Cookies and it mentions these cookies have a chewy center with crispy edges and I was sold! It only has 5 ingredients, butter, cream cheese, salt, flour, and sugar. Besides the cream cheese, I had everything on hand. How simple is that?!

They were so easy to make! The boys made it mostly by themselves. I helped read the instructions and helped Zack (3yo) with the measuring. Blake (6yo) has helped in the kitchen a bunch so he knew how to measure on his own, I think next time I’ll put on the measuring cups and talk about the different measurements then have him try to pick the correct one! My only suggestion would be to let it turn a little darker than our did. The second batch we made was darker and crisper on the edges!
